Up early, I drink only 1 cup of coffee this morning. After spending last evening reading Raw Revolution, I feel inspired.
Breakfast: raw buckwheat granola with sliced banana and almond milk. Herbal tea.
Lunch: I go to Living Light Center and buy some “Not Tuna” pate, 2 slices of kamut bread, and kale salad. I return home and make a sandwich with the pate, kamut bread, and spinach. I eat a little more than 1/2 the kale salad. It is all extremely good.
Snack in the afternoon: sliced apple with almond butter
Dinner: pumpkin noodles with pesto, spinach salad with cucumber, green onion, zucchini, sliced baby carrots, and a small heap of not tuna pate on top.
Dessert: Pumpkin Pudding (I made up the recipe). My grandson loved it! 1 Cup soaked cashews, 1/2 cup almond milk, 2 cups shredded pumpkin, 1 1/2 Tbl honey, 1/2 tsp cinnamon, 1/2 tsp pumpkin spice. Blended with just enough water to achieve a creamy, pudding-like consistency. Yum, oh yum!
