Four weeks into the experiment today. I wake feeling rested and happy, have a cup of coffee and then for breakfast prepare a smoothie consisting of almond milk, orange juice, mixed frozen fruit (mango, banana, strawberries, pineapple), fresh banana, dried unsweetened coconut. Yum.
Afterwards, Rich and I go for a 1 1/2 hour bicycle ride. I push myself pretty hard. Compared with a couple of years ago, when I was riding 3-5 times per week, I feel out of shape, and it frustrates me. I want to get out and ride more.
For lunch, I make a salad with butter lettuce, some arugula, peeled cucumber, sliced thin, red bell peppers, sliced thin, sunflower seed sprouts, lots of avocado, and an orange-miso salad dressing . (I mix the juice of 1 orange with 1 Tbl yellow miso, 2 Tbl olive oil, 1 small clove of minced garlic, and 1/2 tsp crushed ginger. ) Accompanied by a few of the zucchini/walnut crackers I made a few days ago, this makes a very good and satisfying lunch. There’s enough to feed both Rich and I, and he loves it. (Score 1 for me!)
Dinner: For me, a “burrito” with taco/nut meat, lettuce, and guacamole. the boys had turkey burgers with chips and some of the guacamole.
Verdict: The taco/nut meat tastes too much like olive oil. If/when I make it again, I’ll use an oil that is lighter in flavor, Perhaps avocado oil? Overall, though, I’ve done well – another 100% raw day.
